I love cooking up a storm with my family whenever I come home. This latest visit was no exception, as we messed around with a few ideas and recipes to create a delicious meal.

This Cranberry Balsamic Roasted Chicken is comforting and hearty with seasonal flavours and simple instructions. Make the marinade the night before and have everything prepped when you are feeling crunched on time!

It is a tasty and satisfying dish that can be enjoyed with a side of roasted potatoes and vegetables, on a bed of salad with the marinade as a dressing, or in a stir fry.

Cranberry Balsamic Roasted Chicken

Ingredients
 

  • 4 chicken breasts, boneless, skinless
  • 1/3 cup fresh cranberries
  • 1 tsp fresh thyme
  • 1 tsp oregano
  • 1 tsp zaatar
  • Black pepper, to taste

Marinade

  • 1/3 cup fresh cranberries
  • 2 tbsp maple syrup
  • 2 tbsp soy sauce
  • 2 tbsp vegetable oil
  • 1/4 cup balsamic vinegar
  • 2 cloves garlic, crushed
  • Salt and pepper, to taste

Instructions
 

  • In a small blender, combine the marinade ingredients. Mix at medium-high speed until a smooth texture is achieved.
  • Place raw chicken breasts in an 8×8 baking dish and cover them in the marinade.
  • Cover the chicken with plastic wrap and keep in refrigerator for at least 30 minutes up to 24 hours.
  • Preheat oven to 375 degrees Fahrenheit.
  • Once marinaded, add the raw cranberries, thyme, oregano, zatar (optional) and pepper to the chicken mixture.
  • Bake chicken for 20-30 minutes, flipping halfway through.
  • Serve with your choice of sides or on a bed of fresh greens. Enjoy!
