Ingredients

chicken breasts
boneless, skinless

cup
fresh cranberries

tsp
fresh thyme
1
tsp
oregano
1
tsp
zaatar
Black pepper
to taste
Marinade
1/3
cup
fresh cranberries
2
tbsp
maple syrup
2
tbsp
soy sauce
2
tbsp
vegetable oil
1/4
cup
balsamic vinegar
2
cloves
garlic
crushed
Salt and pepper
to taste
Instructions
In a small blender, combine the marinade ingredients. Mix at medium-high speed until a smooth texture is achieved.
Place raw chicken breasts in an 8x8 baking dish and cover them in the marinade.
Cover the chicken with plastic wrap and keep in refrigerator for at least 30 minutes up to 24 hours.
Preheat oven to 375 degrees Fahrenheit.
Once marinaded, add the raw cranberries, thyme, oregano, zatar (optional) and pepper to the chicken mixture.
Bake chicken for 20-30 minutes, flipping halfway through.
Serve with your choice of sides or on a bed of fresh greens. Enjoy!
