Balsamic Citrus Roasted Beets

Ingredients
 

  • 4-5 medium-sized beets
  • 2 tbsp olive oil
  • 1/4 cup orange juice
  • 1 tbsp balsamic vinegar or white balsamic vinegar
  • 1 tsp lemon juice

Instructions
 

  • Preheat oven to 400°F.
  • Peel the beets and cut into 1.5-2" wedges. Place on a baking tray and cook for 30-40 minutes, or until beets can be easily pierced with a fork.
  • While cooking, whisk together olive oil, orange juice, balsamic vinegar and lemon juice.
  • Remove the beets from the oven, drizzle with the dressing and toss to ensure even coating. Let the beets cool for 5-10 minutes to absorb the flavours.
  • Feel free to heat up the beets again before serving. Enjoy!
