Baked Garlic Dijon Meatballs
These Baked Garlic Dijon Meatballs are the perfect protein source for meal prepping. Serve them with rice, pasta or on a salad!
To spice up my meals and keep it interesting in the kitchen, I’ve been experimenting! During a visit to a small local grocer, I spotted some packaged lean ground beef from Two Rivers. This company partners with small farms that raise animals ethically, without hormones, antibiotics or chemical feed additives.
Since I rarely purchase and cook with red meat, I figured I would mix it up and give this company.
Low and behold, this Baked Garlic Dijon Meatball recipe was created and turned out to be such a winner! I added in some cooked lentils to help the meat go further, while including a plant-based source of protein and fibre.
Ingredients for Baked Garlic Dijon Meatballs
This recipe is pretty straightforward and can also be altered, depending on your preferences. All you need is:
- Ground meat
- You can use ground beef, turkey or chicken!
- Lentils
- This is optional but they help the mixture go further by making more meatballs. They also add an extra boost of protein and plant-based fibre!
- Egg
- This is needed to keep all the ingredients together.
- Onion
- I use white onion in this recipe.
- Dijon mustard
- Feel free to use whatever kind of dijon mustard you prefer- grainy or not.
- Breadcrumbs or quick oats
- Using bread crumbs or quick oats is a great way to soak up any extra liquid so the mixture isn’t too runny. It also adds a bit of bulk, just like the lentils do.
- Soy sauce, garlic, turmeric, cumin salt and pepper
- These ingredients each pack so much flavour and should not be missed! Be careful with the turmeric, as it can stain your clothes and surfaces.
Assembling & Baking Meatballs
Once you mix together all of the ingredients, you can use a spoon, a cookie scoop or your hands to mold the meatballs. I have baked them in the oven as well as the air fryer, and both work well! I recommend baking them for 15-20 minutes on 375°F or until they are cooked through.
There are so many ways you can serve these Garlic Dijon Meatballs. Serve them with rice with a drizzle of watered down tzatziki (as pictured). You can also serve them in lettuce or tortilla wraps with your choice of toppings. Alternatively, you may want to add them to a bowl of pasta and top with sauce and parmesan cheese.
Regardless of how you serve them, they are sure to be an excellent source of protein for your next dinner!
