Baked Garlic Dijon Meatballs

Ingredients

  • 1 lb lean ground beef or ground turkey or chicken
  • 1/4 cup red lentils uncooked* (optional)
  • 1 egg
  • 1/3 cup white onion chopped
  • 1 tsp dijon mustard
  • 1 tsp soy sauce
  • 3 cloves garlic crushed
  • 1 tsp turmeric
  • 1 tsp cumin
  • 1/4 cup bread crumbs or quick oats
  • Dash of worcestershire sauce (optional)
  • 1/2 tsp salt
  • 1/2 tsp ground black pepper

Instructions

  • In a small pot, stir together 1/4 cup dried red lentils and 1 cup of water and bring to a boil. Reduce the heat, cover the pot and cook for 10-12 minutes or until otherwise specified on the package. Drain the water and set lentils aside to cool.
  • Preheat the oven to 375 °F and line a baking sheet with tin foil.
  • In a large bowl, add the ground beef, lentils, egg and onion and mix thoroughly.
  • Mix in the dijon mustard, soya sauce, garlic, turmeric, cumin and worcestershire sauce. Stir together.
  • Add the bread crumbs, salt and pepper and stir again.
  • Form the meatballs by taking ~2 tbsp of mixture and rolling into a ball with your hands. Place it on the prepared baking sheet and repeat until all of the mixture is rolled into balls.
  • Bake for ~20 minutes or until golden brown on the outside.
  • Serve with rice, pasta or on a salad and enjoy!

Notes

*Alternatively, you can use 1/2 cup of canned lentils.
