I was lucky enough to snatch this recipe from my friend’s sister’s Ukrainian mother-in-law. This cake is referred to as ‘Kex’ in Russian and is made up of kefir (a fermented probiotic beverage) and walnuts (a source of alpha-linolenic acid, a vegetarian friendly omega-3 fatty acid).

If you like your loaves a bit sweeter, opt for 1 cup of sugar or all white flour. This recipe is altered slightly from the original to provide more fibre and less refined sugar!

Walnut Kefir Loaf

Ingredients
 

  • 1/2 cup whole wheat flour
  • 1/2 cup all purpose flour
  • 3/4-1 cup sugar
  • 2 eggs
  • 1 cup kefir
  • 1/2 cup butter, at room temperature
  • 1/2 tsp baking soda
  • 1/2 tsp vanilla extract
  • 1 cup walnuts, crushed

Instructions
 

  • Preheat oven to 350°F and grease or line a loaf pan or Pyrex dish.
  • In a medium-sized bowl, combine eggs, sugar and baking soda and mix well.
  • Once this is combined, add kefir, vanilla extract and butter. Mix until just combined.
  • Slowly add in the flour and fold in the crushed walnuts.
  • Pour the batter into the loaf pan or Pyrex dish.
  • Bake for ~30-40 minutes or until an inserted toothpick is removed and is clean.
  • Allow the loaf to cool before serving. Enjoy!
