Vegetarian Yellow Split Pea Soup

It’s officially soup season and I could not be more excited. I love to spend a couple of hours on the weekend cooking batches of soups and stews and then keep in the fridge or freezer. They are the perfect option for the nights that you don’t have the time or energy to create a full meal!
Ingredients for Vegetarian Yellow Split Pea Soup
This soup doesn’t require many ingredients, and it’s likely you will already have most of them as staples in your kitchen! Here’s what you need:
- Yellow split peas
- Olive oil
- White onion, garlic and vegetable broth
- Carrots and cauliflower
- Thyme, rosemary, salt and pepper

How to Cook Yellow Split Peas
In this recipe, it’s extremely easy to cook the yellow split peas. Once they are added to the large pot, along with the vegetable broth and water, they naturally cook while the soup is simmering.

Vegetarian Yellow Split Pea Soup
Ingredients
- 2 cups yellow split peas, dried
- 1 tbsp olive oil
- 1/2 cup white onion, chopped
- 4 cloves garlic, minced
- 2 cups vegetable broth
- 4 cups water
- 2 large carrots, peeled and chopped
- 4 cups cauliflower, chopped
- 3/4 tsp thyme, dried
- 3/4 tsp rosemary, dried
- 1 tsp each salt and pepper, more to taste
Instructions
- In a large pot on medium heat, add the olive, onions and garlic and sauté for 2-3 minutes, or until fragrant and soft.
- Add the carrots, cauliflower, split peas, broth and water. Bring to a boil. Reduce the heat to low and let it simmer with the lid on for about 50-60 minutes, or until the vegetables and split peas are cooked.
- Add the thyme, rosemary, salt and pepper and stir well. Adjust according to your preference.
- Optional: use an immersion blender or high-speed blender to achieve a smoother consistency. If using a stand-up blender, allow the soup to cool for 30 minutes before blending.
- Serve, season with salt and pepper and enjoy!
