Vegetarian Yellow Split Pea Soup

Ingredients

  • 2 cups yellow split peas dried
  • 1 tbsp olive oil
  • 1/2 cup white onion chopped
  • 4 cloves garlic minced
  • 2 cups vegetable broth
  • 4 cups water
  • 2 large carrots peeled and chopped
  • 4 cups cauliflower chopped
  • 3/4 tsp thyme dried
  • 3/4 tsp rosemary dried
  • 1 tsp each salt and pepper more to taste

Instructions

  • In a large pot on medium heat, add the olive, onions and garlic and sauté for 2-3 minutes, or until fragrant and soft.
  • Add the carrots, cauliflower, split peas, broth and water. Bring to a boil. Reduce the heat to low and let it simmer with the lid on for about 50-60 minutes, or until the vegetables and split peas are cooked.
  • Add the thyme, rosemary, salt and pepper and stir well. Adjust according to your preference.
  • Optional: use an immersion blender or high-speed blender to achieve a smoother consistency. If using a stand-up blender, allow the soup to cool for 30 minutes before blending.
  • Serve, season with salt and pepper and enjoy!
