How do you like to spend Valentine’s Day? Are you a lovey-dovey type with your significant other or would you rather spend the day with your close family and friends? Or perhaps you are filling up your own cup with self care and love. How ever you choose to spend the day, I hope it’s filled with lots of delicious food, like this Raspberry Coconut Oatmeal. And don’t forget the slivered almond hearts on top!

Oatmeal is a standard comfort breakfast food but sometimes it needs a little sprucing up. I prefer this pretty-in-pink version because it brightens up the morning without too much extra hassle. Colour, taste and comfort is all it takes to be sold on this delicious morning meal.

What you will need

The main ingredients you need for this recipe are:

  • Large flake oats
    • I find these hold their integrity more than quick oats and give a chewier texture. If you prefer it to be smoother, opt for quick oats instead.
  • Coconut milk
    • This adds creaminess and flavour! I opted for the coconut milk out of a can because it’s a thicker consistency.
  • Raspberries
    • Duh. This recipe calls for frozen berries because it gives a more pigmented colour. If you aren’t a fan of raspberries, I guess you could also use frozen strawberries. If you must.
  • Chia seeds
    • These little fellas (or gals) are so packed with nutrients, it’s unreal! Fibre, omega 3s, protein… AND they add a ton of texture!
  • Vanilla extract
    • This rounds out the flavour profile and takes the oatmeal to the next level.

Coconut milk in oatmeal

Using coconut milk in oatmeal is a great way to add a creamy texture to your breakfast. Coconut milk is also dairy-free, so a great option for anyone that is lactose-intolerant or prefers a non-dairy milk.

If you want the same flavour but a lower fat content, consider opting for a light coconut milk.

Toppings to try

This oatmeal is really versatile and can be a vessel for a bunch of toppings. Here are some of my favourite that I recommend you try!

  • If you need a little bit of crunch to be satisfied
    • Sliced almonds
    • Chopped walnuts
  • For extra protein, choose your favourite flavour of
    • Greek yogurt
  • To maximize that coconut flavour with a bit of chewiness
    • Shredded coconut
  • Get your fruit quota with
    • Extra berries
    • Sliced banana

Raspberry Coconut Oatmeal

Ingredients
 

  • 1/2 cup large flake oats
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 1/2 cup raspberries*
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • Slivered almonds, (optional)
  • Greek yogurt, (optional)

Instructions
 

  • In a small pot, combine the oats, water and coconut milk and place on the stove on medium heat. Cook through, stirring often until you reach the desired texture (it should only take ~3-5 minutes). If you realize the mixture is too thick, you can add small amounts of water to thin it out.
  • Keep the pot on the burner but turn off the heat. Add raspberries, vanilla extract, cinnamon and flax seed. Stir until the oatmeal turns pink and everything is combined.
  • Place oatmeal in a bowl and top with maple syrup and slivered almonds or any other favourite toppings. Enjoy!
