Raspberry Coconut Oatmeal

Ingredients

  • 1/2 cup large flake oats
  • 1/2 cup water
  • 1/2 cup coconut milk
  • 1/2 cup raspberries*
  • 1 tbsp chia seeds
  • 1 tsp vanilla extract
  • Slivered almonds (optional)
  • Greek yogurt (optional)

Instructions

  • In a small pot, combine the oats, water and coconut milk and place on the stove on medium heat. Cook through, stirring often until you reach the desired texture (it should only take ~3-5 minutes). If you realize the mixture is too thick, you can add small amounts of water to thin it out.
  • Keep the pot on the burner but turn off the heat. Add raspberries, vanilla extract, cinnamon and flax seed. Stir until the oatmeal turns pink and everything is combined.
  • Place oatmeal in a bowl and top with maple syrup and slivered almonds or any other favourite toppings. Enjoy!

Notes:
*I like using frozen raspberries here because they make the oatmeal more pigmented!
