Fresh peaches are hands down one of my favourite things about summer. I get excited for them every year, and rightfully so. They are perfectly sweet, super juicy and incredibly versatile. From overnight oats to grilling on the BBQ to these Peach and Brie Bites, they make a recipe THAT much better.

Growing up in southern Ontario, we had a local farm that offered U-Pick peaches. Of course, doing this when I was in high school, I just tried to fill my basket as much as humanly possible. Nevermind that I ended up with more peaches than I could handle! If only I had the knack for recipe development and trying new things back then…

 

How to Pick the Perfect Peach

It’s not rocket science to know how to pick peaches but here are some basic tips. If there is any green colouring on the skin of the peach, it means it was picked too early.

Peaches become sweeter as they ripen. So when you are buying peaches from a store, the best way to tell if it’s ripe enough is to gently squeeze it. If it gives a little, it’s ready. But don’t squeeze too hard or you’ll just bruise the fruit!

This summer is (dare I say) finally starting to feel a bit more like “normal life” (whatever that is). For some, that may mean more get-togethers with family and friends or potluck parties in the backyard. I wanted to create this recipe to celebrate these exciting times again, with the influence of summer fruits, creamy cheese and fresh herbs.

This recipe comes together in less than 15 minutes, making it the perfect appetizer to make when you’re in a rush or have things on the go. It can also be customized to your own liking or dietary preferences (see below for suggestions).

The goal with these Peach and Brie Bites is to get you to share good and delicious food with loved ones without the time constraints it can take to make something fancy.

Ingredients for Peach and Brie Bites

  • Whole grain crackers
    • Whole grain crackers are recommended here because they tend to be a bit more stable. They also provide some additional fibre, which is beneficial for gut health and digestion. However, if you have a favourite type of cracker that you prefer more or easily have on hand, feel free to use them instead!
    • Gluten-free option: try rice crackers or Mary’s Gone Crackers.
  • Peach
    • If you have *just-ripe* peaches, these are perfect for this recipe. If the peach is too ripe it can be hard to remove from the pit and the juice may make the crackers soggy.
    • Nectarines can also be used if you don’t have peaches available.
  • Brie cheese
    • I debated what type of cheese to use in this recipe but decided on brie because it felt like a more muted flavour profile than others. Alternatively, I am a major fan of hard aged cheese, which I think would also pair wonderfully here.
  • Fresh basil
    • This fresh herb really rounds out the flavour profile, don’t skip it!
  • Honey
    • For a touch of sweetness, a drizzle of honey completes this recipe. You could also use a bit of maple syrup or omit if prefered.

Peach and Brie Bites

Ingredients
 

  • 10 whole grain crackers
  • 1 just-ripe peach
  • brie cheese
  • 5 leaves fresh basil
  • 1-2 tsp honey

Instructions
 

  • Wash the peach and then cut it into very thin slices (about 1/4" thick and 2" long, depending on the size of your cracker).
  • Next, cut the brie cheese into small wedges (also about 1/4" thick and 2" long, depending on the side of your cracker).
  • Time to assemble! Spread out the crackers on a plate or serving platter. Add one piece of brie to each cracker and then layer a piece of peach on top.
  • Top this with a full or half of a small leaf of fresh basil. Repeat on all crackers.
  • Drizzle a thin layer of honey over all of the bites. Serve immediately and enjoy!
