Lemon, Dill & Dijon Salmon
The BEST salmon marinade you can imagine! A combination of sweet and sour, plus a hint of fresh dill creates this perfect Lemon, Dill & Dijon Salmon.
The origins of this recipe
This recipe originated from the amazing cookbook Yum and Yummer, which I highly recommend if you don’t have it already! The author, Greta Podleski, is the co-author of four #1 national bestselling cookbooks! Can you say goals?! Let’s rewind to when I was living in Ottawa and the first time I tried Greta’s version of this recipe. The flavour took me by surprise in the best way! I was so used to my Mom’s salmon recipe: lemon juice and lemon pepper (you also need to try this). Although this marinade took a bit more time, it was such a nice change. Since then, I have made this for myself countless times and shared it with many friends and family members. I’m sure they can also attest to its deliciousness!
The updates
As much as I love the original recipe, I did want to make a few tweaks. Here are the changes I made to create this Lemon, Dill & Dijon Salmon:
- Reduced the portions so there isn’t a ton of leftover marinade that ends up down the drain.
- Cut down on the sweetness. I found the maple syrup sometimes burned on the pan and took away from the other flavours.
- Slightly brought down the lemon flavour so it wasn’t too overpowering.
Since I’ve tweaked these ingredients, you’re welcome to do the same if needed. But first, give it a try as is and let me know how you like it! Pair it with rice and your choice of veggies or salad to make it a complete meal. I love to enjoy it with roasted bok choy, peppers and broccoli. Lemon, Dill & Dijon Salmon
Ingredients
- 1 lb fresh salmon
- Pinch of salt and pepper
Dill Dijon Marinade
- 2 tbsp dijon mustard
- 2 tbsp fresh lemon juice
- 1 tbsp balsamic vinegar
- 1 tbsp extra virgin olive oil
- 1.5 tbsp fresh dill*, chopped
- 2 tsp lemon zest
- 2 tsp maple syrup
- 2 tsp garlic, crushed
Instructions
- Preheat oven to 425°F and line a baking tray with tin foil or a silicone baking mat.
- In a small bowl or glass measuring cup, mix together the marinade ingredients. Stir until well combined.
- Place the fresh salmon on the baking tray and pour the marinade over the filet. Scoop up the marinade that runs off the fish and add it back on, making sure it is fully covered. Season with salt and pepper.
- Cook for 10-13 minutes, depending on the thickness of the salmon. Make sure you don't overcook it! You want the salmon to flake away with gentle pressure from a fork. If, after the recommended time, the flesh still looks a bit pink, continue cooking it in 2-3 minute increments.
- Serve immediately with a side of rice and your choice of roasted veggies or salad. Enjoy!
