Garden Salad with Tuna
This salad has been my saving grace more times than I can count!
Packing it up the night before to bring to work, whipping it together quickly before I have to run out the door or taking all the time I need but running a bit low on budget (canned tuna is so cheap!), this salad has it going on.
With tons of flavour, simple ingredients and staying power to keep you going for the rest of the day, you will soon be praising this meal as much as I do.


Garden Salad with Tuna
Ingredients
- 4 cups leafy greens, (spinach and kale are preferred)
- 1 can chunk tuna , in water
- 1 cup cucumber, diced
- 1 cup tomato, diced
- 1/2 cup carrots, diced
- 1 avocado, sliced OR 3 tbsp goat cheese
- 2 tbsp olive oil
- 2 tbsp balsamic vinegar
- Salt and pepper , to taste
Instructions
- In a large bowl, toss all ingredients together.
- Drizzle with olive oil and balsamic vinegar* and season with salt and pepper. Easy peasy!
Notes
*If you are making this salad the night before eating it, wait until the day of to add the olive oil and vinegar.
