Easy Homemade Salad Dressing

I should start by giving credit for this recipe to my mom. She was recently visiting me in Vancouver and we got into conversation about the recipes I have shared recently. Apparently, she had requested I upload a recipe for a salad dressing last year and regrettably, it had fallen off my radar. So here we are, this one’s for you, Mom!
And on that note, if you have also requested a recipe lately and I haven’t gotten around to it, my sincere apologies. It has been a whirlwind of the last couple of months but I’m getting back into the swing of recipe development now. I’m always looking for inspiration and ideas that you find interesting, so let me know if you have suggestions! Now, let’s get to the recipe.
Ingredients needed
I am not a fan of salad dressings that take an hour to make, plus multiple ingredients and an assortment of kitchen equipment. Salads should be quick, easy and flavourful, and the same goes for this Easy Homemade Salad Dressing. All you need are these 5 ingredients:
- Extra virgin olive oil
- Red wine vinegar
- Garlic
- Dried parsley
- Salt
The prep could not be easier. All you have to do is add these ingredients to a glass measuring cup, a mason jar or another airtight container and mix well! The oil will naturally separate from the other ingredients, so make sure to stir or whisk together right before serving.
Substitutions and Modifications
If you’re anything like me, you make a lot of substitutions in recipes. Maybe you don’t have all of the ingredients or you need to alter the portion sizes. Whatever the reason, here are some suggestions of recipe modifications for this Easy Homemade Salad Dressing.
- Instead of extra virgin olive oil, you can use whatever neutral tasting oil you have on hand. This may be canola oil, avocado oil or vegetable oil, for example.
- If red wine vinegar isn’t available, you can opt for white wine vinegar, apple cider vinegar or balsamic vinegar. These three will offer slightly different taste profiles, but will all achieve the same effect.
- Garlic is a must in this recipe, in my opinion, but it doesn’t have to be fresh. Feel free to use garlic powder if that’s easier for you. Just keep in mind that you won’t need as much powder to achieve the same taste as it is more concentrated than fresh garlic. Start with 1/3 of the portion and work your way up based on your preference.
- If you don’t have or like parsley, you can choose to use another herb like basil, oregano or thyme.

Easy Homemade Salad Dressing
Ingredients
- 1/2 cup extra virgin olive oil
- 3 tbsp red wine vinegar
- 1 tsp garlic, crushed
- 1 tsp dried parsley
- 1/4 tsp salt
Instructions
- In a glass measuring cup, add the ingredients. Mix until well combined. Adjust the flavours as desired.
- Drizzle this over your favourite leafy green or bean salad and keep the remaining dressing in an airtight container in the fridge for 3-4 days. Enjoy!
