Coconut Almond Granola
This Coconut Almond Granola is a satisfying way to start your morning. It adds texture and flavour to your smoothie bowls, oatmeal or yogurt!
Have you ever finished a meal and noticed that even though you had a decent portion, you don’t actually feel satisfied? I have definitely been there! There are many things to consider in this situation, but one of the first is the texture of the food. Was the meal all one consistency? Did it feel mushy or dry? This can have a big impact on how content we feel after eating.
This Coconut Almond Granola is a delicious and easy way to achieve that perfect crunch that can round out a meal.
Ingredients for Coconut Almond Granola
- Quick oats
- I have tried this recipe with large flake oats as well and I prefer the way the quick oats can clump together and create larger chunks of granola.
- Sliced almonds and walnuts
- Almonds and walnuts are excellent sources of protein, fibre and healthy fats. I recommend opting for sliced almond and chopped nuts so you don’t have to bite into whole pieces.
- Flax seeds
- These seeds provide omega 3 fatty acids, fibre and protein, as well as nutrients like iron and magnesium! To make them easier to absorb, I tend to use ground flax seed instead of whole.
- Shredded coconut
- Depending on your preference, opt for sweet or unsweetened shredded coconut.
- Coconut oil
- This helps the mixture stick together and create chunks of granola. Plus, it adds some extra coconut flavour.
- Almond butter
- This was inspired by the granola from a local smoothie shop called Glory Juice. Their granola also has almond butter in it and it is UNREAL! I included it to round out the almond flavour as well as provide some extra protein and healthy fats.
- Maple syrup, vanilla extract, cinnamon and salt
- These ingredients are really just bonus flavour enhancers and cannot be missed!
How to Make Homemade Granola
This recipe is super simple and takes only 15 minutes to prepare the ingredients. All you have to do it mix together the dry ingredients (nuts, seeds, oats, shredded coconut, cinnamon and salt) in one bowl. In another bowl whisk together the wet ingredients (coconut milk, maple syrup, almond butter and vanilla). Stir the dry and wet ingredients together until it is well incorporated and then spread out evenly on a baking sheet.
Here’s where the crunch factor comes into play. I recommend baking it anywhere between 30-45 minutes. It really depends on your texture preference and the strength of your oven. As always, start with baking it from ~30 minutes, mixing the granola half way through, and then add more time if you want it crunchier.
Although it takes a little bit more effort than buying the granola from the store, making it at home is a great option. You know exactly what is going into it, you can adjust the flavours as you like and it’s typically cheaper as a bulk recipe!

Coconut Almond Granola
Ingredients
- 2 cups quick oats
- 1 cup sliced almonds
- 1 cup walnuts, chopped
- 1/4 cup ground flax seeds
- 1/2 cup unsweetened shredded coconut
- 1/4 cup coconut oil, melted
- 1/4 cup maple syrup
- 1/4 cup almond butter
- 1 tsp vanilla extract
- 1 tsp cinnamon
- Pinch of salt
Instructions
- Preheat oven to 325°F and line a baking sheet with tin foil or a silicone baking sheet liner.
- In a medium-sized bowl, mix together the oats, almonds, walnuts, flax seeds, coconut, cinnamon and salt. Set aside.
- In a large bowl, add the coconut oil, maple syrup, almond butter and vanilla extract. Whisk together.
- Add the dry ingredients to the wet and mix together until everything is well incorporated.
- Pour the granola on the baking sheet and spread it out evenly.
- Bake for approximately 30 minutes, stirring halfway through. If you want the granola to be crunchier, bake for another 5-10 minutes or so.
- Serve on top of yogurt, oatmeal, cereal or a smoothie bowl and enjoy!
