Coconut Almond Granola

A delicious way to add crunch and nutrition to your yogurt bowls, smoothie bowls and more!

Ingredients

  • 2 cups quick oats
  • 1 cup sliced almonds
  • 1 cup walnuts chopped
  • 1/4 cup ground flax seeds
  • 1/2 cup unsweetened shredded coconut
  • 1/4 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1/4 cup almond butter
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • Pinch of salt

Instructions

  • Preheat oven to 325°F and line a baking sheet with tin foil or a silicone baking sheet liner.
  • In a medium-sized bowl, mix together the oats, almonds, walnuts, flax seeds, coconut, cinnamon and salt. Set aside.
  • In a large bowl, add the coconut oil, maple syrup, almond butter and vanilla extract. Whisk together.
  • Add the dry ingredients to the wet and mix together until everything is well incorporated.
  • Pour the granola on the baking sheet and spread it out evenly.
  • Bake for approximately 30 minutes, stirring halfway through. If you want the granola to be crunchier, bake for another 5-10 minutes or so.
  • Serve on top of yogurt, oatmeal, cereal or a smoothie bowl and enjoy!
