Over the last couple of months, when I have reached out to ask about the types of recipes my followers want to see, I had a ton of requests for savoury snack ideas. This got me thinking…

This Chili Lime Roasted Chickpea recipe was the end result!

Chickpeas are a great way to pack in a ton of nutrients without a lot of prep or thought required. Did you know that 1/2 cup of chickpeas provide:

  • 5 grams of fibre (great for digestion)
  • 5 grams of protein (helps us feel full and satisfied for longer)
  • and a variety of vitamins and minerals!

So now that we know they contain lots of nutrients, we need to make them tasty enough to enjoy as a snack! Cumin has slowly become one of my favourite spices to use in a variety of dishes. It pairs so well with a number of other herbs and flavours, just like it does here with the lime zest, chili powder and garlic.

NOTE: If you don’t have garlic salt, you can just use garlic powder and add in a pinch of salt to really enhance the flavours.

The texture of these roasted chickpeas can vary, depending on the cook time. This is completely up to you and your preferences. If you would rather a crispier chickpea, add a couple of minutes to the cooking time. This is also outlined in the recipe instructions for you to follow.

Chili Lime Roasted Chickpeas

Ingredients
 

  • 1 540 ml can of chickpeas, drained, rinsed and dried
  • 1 tbsp vegetable oil
  • 1/2 tsp cumin
  • 1/2 tsp chili powder
  • 1/2 tsp garlic salt, or garlic powder + pinch of salt
  • 1 tsp lime zest

Instructions
 

  • Preheat oven to 425°F and line a baking tray with tin foil or a silicone baking sheet.
  • In a small bowl, mix together the cumin, chili powder, garlic salt and lime zest. Set aside.
  • Make sure the chickpeas are well dried so they have the chance to crisp up! Place them on the baking tray, drizzle with the oil and shake well.
  • Sprinkle the chili lime seasoning on the chickpeas and shake the pan to ensure they are evenly coated.
  • Roasted for 25-35 minutes, or until your desired crispness is achieved. Some may prefer to cook for 5-10 minutes longer.
  • Once they have cooled down, enjoy! Leftovers can be stored in an airtight container for 3-4 days.
