Cashew Bar with Chocolate Coating

Equipment

  • Food processor or high speed blender

Ingredients

  • 1 cup walnuts
  • 1 cup cashews raw
  • ½ cup dates pitted
  • ¼ cup sweetened shredded coconut
  • 1 tbsp coconut oil melted
  • 1 tsp vanilla extract
  • ¼ tsp salt

Chocolate coating

  • ½ cup chocolate chips
  • 1 tsp coconut oil

Instructions

  • To a food processor, add the walnuts, cashews, dates, shredded coconut, coconut oil, vanilla extract and salt. Blend for at least 20-30 seconds, or until combined and crumbly.
  • Pour the nut mixture into a greased 6x6" square pan and press down firmly. It may seem too crumbly to become a crust but once it is pressed into the pan, it sticks together quite well. If you want to add 1-2 tsp of water just to be sure, you can do that too. You may want to use a spatula or the base of a measuring cup to help evenly press the nut mixture into the base of the pan. Set to the side.
  • In a small bowl, add the chocolate chips and coconut oil. Microwave in 30 second increments, stirring between each, until the chocolate is melted.
  • Pour the melted chocolate overtop of the nut mixture and spread it out evenly.
  • Transfer the pan to the fridge for at least 2 hours, the freezer for at least 1 hour or until the chocolate coating has completely solidified.
  • Cut the square into 12 bars and store in the fridge or freezer until you are ready to enjoy!

Ingredient Tips & Substitutions

  •  Walnuts
    • You can use whole, halved or chopped walnuts in this recipe. They are being pulsed in a food processor so the size doesn't matter.
  • Cashews
    • Use raw and unsalted cashews for this recipe.
  • Dates
    • Make sure to use pitted dates to save you time and energy.
  • Shredded coconut
    • I used sweetened shredded coconut because that's what I have in my pantry, but you can also use unsweetened shredded coconut.
  • Chocolate chips
    • I use semi-sweet chocolate chips but you could use milk, dark or even white chocolate.
