- To a food processor, add the walnuts, cashews, dates, shredded coconut, coconut oil, vanilla extract and salt. Blend for at least 20-30 seconds, or until combined and crumbly. 
- Pour the nut mixture into a greased 6x6" square pan and press down firmly. It may seem too crumbly to become a crust but once it is pressed into the pan, it sticks together quite well. If you want to add 1-2 tsp of water just to be sure, you can do that too. You may want to use a spatula or the base of a measuring cup to help evenly press the nut mixture into the base of the pan. Set to the side. 
- In a small bowl, add the chocolate chips and coconut oil. Microwave in 30 second increments, stirring between each, until the chocolate is melted. 
- Pour the melted chocolate overtop of the nut mixture and spread it out evenly. 
- Transfer the pan to the fridge for at least 2 hours, the freezer for at least 1 hour or until the chocolate coating has completely solidified. 
- Cut the square into 12 bars and store in the fridge or freezer until you are ready to enjoy!
