Almond Flour Banana Pancakes

These Almond Flour Banana Pancakes are easy to make, rich in protein and can be made ahead of time to make your mornings even simpler!

Ingredients

  • ¾ cup almond flour
  • 1 large egg
  • 1 large ripe banana mashed
  • 1 tbsp maple syrup
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • Chocolate chips optional
  • Chopped walnuts optional

Toppings (optional)

  • Banana
  • Greek yogurt
  • Maple syrup
  • Chocolate chips

Instructions

  • In a bowl, stir together the mashed ripe banana, egg, maple syrup and vanilla extract. Add the remaining ingredients and mix well.
  • Feel free to fold in any of the optional mix-ins (chocolate chips or chopped walnuts).
  • On medium-low heat, pour out 3 tbsp of the pancake batter onto a lightly oiled, buttered or nonstick frying pan.
  • Cook for 3-4 minutes and then flip to cook for another 3-4 minutes on the other side. Be careful when flipping them, they're delicate! Repeat with the rest of the batter.
  • Serve immediately with suggested and optional toppings. Enjoy!
