As I’m sure you know by now, overnight oats is my favourite breakfast for those busy mornings. With limited time to spend in the kitchen, making them up the night before saves stress and energy, allowing for more time to do whatever else is on the mind.

Because oats are very versatile, I wanted to try out a new technique that adds flavour and a bit of a pick-me up (hello caffeine!) This Vanilla Chai Overnight Oats recipe is a sure-fire way to start the day!

It’s important to make these easy recipes adaptable to your individual preferences. If you prefer Earl Grey or a more specific tea, feel free to experiment! Another area to make this recipe your own is with the milk.

Plant-based milk is quickly becoming incredibly popular in grocery stores, cafes and restaurants. With so many choices, it’s hard to find a favourite. And while I don’t discriminate against cow’s milk or other plant-based alternatives, flax milk has surprised me in many ways.

Its nutrient profile is quite impressive: for 1 cup of flax milk there are 0 grams of sugar, 3 grams of fibre and 4 grams of protein! For a non-dairy choice, this is a great option. It also comes in vanilla, chocolate and unsweetened flavours so you can choose the option that suits your needs!

Vanilla Chai Overnight Oats

Ingredients
 

  • 1 cup large flake oats
  • 1/4 cup chia seeds
  • 1 cup Manitoba Flax milk
  • 1 cup water
  • 1 chai tea bag
  • 1/2 tsp cinnamon
  • 1/2 tsp vanilla extract
  • 1 tsp maple syrup, optional

Toppings (optional)

  • Sliced banana
  • Frozen or fresh berries
  • Dried coconut
  • Greek yogurt
  • Nut butter

Instructions
 

  • Bring a cup of water to boil. Place the tea bag in the water
    and steep for 3-5 minutes.
  • In a medium sized bowl combine the oats and chia seeds together.
    Pour in the tea and milk and stir until the mixture is well combined.
  • Add the cinnamon, vanilla extract and maple syrup and stir.
  • Allow the oats to absorb the liquid for 5 minutes and then
    stir again.
  • Let the mixture set for at least 1 hour, preferably overnight
    in the fridge.
  • Add your desired toppings and enjoy!
