Incorporating vegetables into snacks and meals is sometimes easier said than done. More often than not, people like to mask the taste of raw vegetables by adding dips, toppings and other flavour-boosting components. While this is a great way to get the nutrient-packed foods into your diet, some dips and sauces bring a bunch of extra calories as well as added fat and sugar, making the veggie dish less healthy.

This take on sautéed vegetables is quick, simple and requires only a few ingredients. Choose your favourite vegetables and make this delicious side for everyone to enjoy. You’ll be surprised at how fast they get swept up!

Thai Sautéed Vegetables

Ingredients
 

  • 2 cups fresh vegetables (asparagus, broccoli, zucchini, red pepper, etc.), chopped
  • 1/2 tsp red pepper flakes
  • 1 tbsp sesame seeds
  • 2 tsp fish oil
  • 1 1/2 tbsp soy sauce
  • 1 close garlic, pressed
  • 1/8 cup water

Instructions
 

  • In a sauce pan on medium heat, lightly toast the red pepper flakes and sesame seeds for ~1 minute, until golden. Remove from pan and set aside.
  • To the same sauce pan, add fish oil, soy sauce, garlic and water. Mix to combine. 
  • Add the vegetables to the sauce and sauté for 5-7 minutes, or until they reach a desirable texture. You may need to add more water as it boils off and evaporates.
  • Once cooked, transfer the vegetables to a plate and top with toasted red pepper flakes and sesame seeds. Enjoy!
