Peanut Lime Chicken with Zesty Rice Noodles
This has to be one of my new favourite meals! Since initially trialing these ingredients together I have made this recipe many times with some very positive feedback, and I’m hoping you will feel the same.

As you can tell, the protein source in this dish is bite-sized pieces of tender chicken. However, if you aren’t a fan of poultry or if you would like to make this meal vegetarian, feel free to opt for tofu or tempeh instead. As for the base, rice noodles cook super quickly so were an effortless choice. Plus, they easily take on whatever flavour they are combined with. Finally, the peanut lime sauce is the real hero here and brings this meal together while offering a thick and creamy texture.

Peanut Lime Chicken with Zesty Rice Noodles
Ingredients
- 1 tbsp olive oil
- 1 tbsp sesame oil
- 5 chicken breasts, chopped into 1" pieces
- 1/2 package (or 200 g) rice noodles, uncooked
- 1 red or orange bell pepper, thinly sliced
- 2 cups fresh spinach, chopped
- Salt & pepper
Peanut Lime Sauce
- 1/3 cup peanut butter, creamy
- 1/4 cup lime juice
- 1 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tsp garlic, crushed
- 1/2 tsp sriracha
Toppings (optional)
- Cilantro, lime juice, bean sprouts, crushed peanuts
Instructions
- In a small bowl combine the ingredients for the peanut lime sauce. Mix well and set aside.
- In a frying pan or wok, heat the olive oil and sesame oil at medium-high heat. Add the chopped chicken breasts and season with salt and pepper. Cook for 6-7 minutes or until the pieces are cooked through.
- In the meantime, bring a medium sized pot of water to boil. Add the rice noodles and cook according to the product's instructions. Drain the rice noodles and rinse with cold water to prevent clumping. Set aside.
- To the chicken, add the sliced bell pepper and cook for another 2-3 minutes, or until the peppers are tender.
- Use 1/4 cup of the peanut lime sauce and add it to the chicken and pepper mixture. Toss in the fresh spinach and mix well. Cook for 1-2 minutes, until the spinach is wilted.
- Serve the chicken mixture over the rice noodles, drizzle extra peanut lime sauce on top and dress it with any additional toppings you like! Enjoy!
