PB & J Protein Bars
If you have ever been on a trip, out at the mall or along for a hike with me, you know that I love to bring snacks. It has actually become an essential part of travel. Not only does it save me money from buying overpriced goodies at the airport or en route stations, it saves my friends and family from a variety of “hanger” episodes from me.

I had never tasted dried strawberries before but when I found them in a nearby fruit and nut bulk store, I knew I had to incorporate them into a recipe. Pairing them with peanut butter just seemed like the best way to get the classic and comforting taste combination.
These PB & J bars are a sure-fire way to feel satisfied when you need a pick me up to get to the next clothing store or some fuel and energy to make it up the mountain.

PB & J Protein Bars
Ingredients
- Heaping 1/3 cup Medjool dates, pits removed
- 1 1/2 cups large flake oats
- 1 cup walnuts
- 1/3 cup smooth peanut butter
- 1/2 cup dried strawberries
- 1/4-1/3 cup water, added in increments
Instructions
- In a food processor or high-speed blender, pulse the all the ingredients (except water) together until well combined.
- Add in the water 1-2 tbsp at a time until you achieve desired consistency.
- Press the batter into an 8 x 8" Pyrex dish and refrigerate for at least 1 hour.
- Store in the fridge for 5-7 days or in the freezer for up to 3 months. Enjoy!
