Lemon Garlic Shrimp
In the summer more than ever, I am all about keeping it simple and that is exactly what this recipe does. Coming together in 10 minutes or so it may just be the quickest “fancy” meal you could make for yourself.
I kept this at a one-person serving because I have noticed a lot of people opting out of cooking if they are only serving themselves. Instead, they may choose a convenient meal from the grocery store or fast food restaurant. While these meals definitely save time and are absolutely okay to incorporate into your lifestyle, relying on them as a frequent dish will soon deplete not only your body’s energy and nutrient stores but also your wallet.
So, give this easy-peasy lemon squeezy recipe a try, pairing the shrimp with pasta, salad, rice, wraps… (dare I keep going?). It’s a bright and light addition to your dinner repertoire.


Lemon Garlic Shrimp
Ingredients
- 10-12 raw shrimp
- 2 tsp butter
- 1 tbsp olive oil
- 1-2 cloves garlic, minced
- 1 1/2 tsp lemon zest, grated
- Salt and pepper, to taste
- Dried basil
Instructions
- On medium-low heat, heat up the butter until melted and then add the olive oil.
- Add the minced garlic and saute for 2-3 minutes or until fragrant.
- Toss in the shrimp and cook for 2-3 minutes and then flip. Add the lemon zest to the shrimp and continue cooking until the shrimp is completely opaque.
- Season with salt, pepper and dried basil.
- Serve over pasta (linguine or rice pasta pair wonderfully as they are light noodles) or salad and enjoy!
