Cookies don’t need to be nutritious to be enjoyed. The typical butter, sugar and flour should be enjoyed without guilt in a balanced diet. However, I still like to experiment in the kitchen when there is an opportunity to add some plant-based healthy fats and protein.

Hemp Seed and Almond Butter Cookies

Ingredients
 

  • 3/4 cup almond butter, or peanut butter
  • 1/3 cup hemp seeds
  • 1/3 cup sugar
  • 1/3 cup chocolate chips
  • 1 large eggs
  • 1 tsp vanilla extract

Instructions
 

  • Preheat the oven to 350°F.
  • In a large mixing bowl, add almond butter, sugar, egg, vanilla extract.
  • Once incorporated, mix in the hemp seeds and chocolate chips.
  • Form into 2 cm balls and place on a baking sheet.
  • Cook for 15-17 minutes and let cool before enjoying.
