Garlic Chicken Lettuce Wraps
This is the first recipe that my boyfriend made for me and he declares it his specialty. I was pretty surprised at how tasty and easy to whip up it was. It is the perfect meal to create and share with friends or use any leftovers for lunches or next-day dinners.
Fresh, filling (especially if you add some rice or other whole grains) and tasty, this is a great recipe to have on hand that can be easily modified. Enjoy!


Garlic Chicken Lettuce Wraps
Ingredients
- 2 chicken breasts, cut into bite-sized pieces
- 1 head of romaine, Boston or iceberg lettuce
- 1 red bell pepper, diced
- 1 cup celery, diced
- 1 cup carrots, peeled and diced
- 3 cups broccoli, chopped
- 2 tsp garlic, minced
- 1/2 tbsp vegetable seasoning , ex. Clubhouse Garlic Plus spice blend
- 1 tbsp poultry seasoning
- 2 tbsp vegetable oil
- Salt and pepper, to taste
- Soy sauce, to taste
- Sesame oil, optional
Instructions
- Coat a large pot or wok with 1 tbsp of vegetable oil and bring to medium heat. Add the minced garlic and cook until fragrant.
- To this, add the vegetables and cover with a lid, checking on them and stirring every 2 minutes. After 5-6 minutes of cooking (or when the vegetables start to soften), sprinkle on the vegetable seasoning and stir again, turning the heat down to low.
- While the vegetables are cooking, add the remaining 1 tbsp of vegetable oil to a separate large pan and bring to medium heat. Add the chicken and sauté until cooked through.
- Once vegetables and chicken are fully cooked, transfer the chicken into the pot of vegetables, including the juices. Season with salt and pepper to taste.
- Rinse the lettuce and pat with a paper towel to dry.
- Scoop the chicken and vegetable mixture into a lettuce wrap and drizzle with desired amounts of soy sauce and sesame oil (optional). Enjoy!
Notes
Feel free to also add some cooked rice to the lettuce wraps if you would like to incorporate more whole grains.
