This dip is inspired by the “Kale Eda-Yummy Dip” that I originally discovered from Farm Boy (an Ontario-based grocery store, for anyone not familiar). I have always been a fan of dips but had never tried one with this kind of flavour and colour until I discovered the product from Farm Boy. I took a look at the ingredients and realized it would be pretty easy to recreate at home. Making recipes like this at home is a great way to save money, bring awareness to the ingredients you are consuming and limit additives and fillers. Plus, what else are we going to do on these rainy days during the pandemic?

You may know that I am obsessed with snacks, as they help keep my energy levels optimal and prevent episodes of hanger. However, it wasn’t until I shared a poll on Instagram stories asking whether you prefer sweet or savoury snacks that I realized I gravitate towards sweet snacks. You can always find me with a kitchen stocked with muffins, banana breads, fruit with peanut butter, etc. but I was missing the variety of options for savoury snacks. Hence, the need to recreate and share this recipe.

The benefits of this Edamame and Spinach dip include:

-Plant-based protein: found in the edamame beans and tahini (also known as sesame paste)

-Antioxidants: provided by the leafy spinach and garlic

-Fiber: found in the edamame and spinach

-Healthy fats: delivered through the edamame, tahini and extra virgin olive oil

-Major flavour: thanks to the combination of garlic, lemon juice and cilantro

The easiest way to utilize the edamame beans time and time again is to purchase them frozen. This way you can divvy up the amount required for the recipe (2 cups) and save the rest of the bag for next time or another dish. Simply place the frozen edamame beans in a microwave-safe bowl, add 1-2 tbsp of water and microwave on high for 3-4 minutes, stirring halfway.

If you are not a fan of cilantro, feel free to try this recipe with fresh basil for a pesto-like experience!

Pair this Edamame Spinach Dip with raw veggies, crackers, pita bread or serve in a sandwich or wrap. Enjoy!

Edamame-Spinach-Dip

Edamame Spinach Dip

Ingredients
 

  • 2 cups edamame
  • 2 cups fresh spinach
  • 3 tbsp tahini
  • 3 tbsp lemon juice
  • 1/2 cup fresh cilantro
  • 3 tbsp extra virgin olive oil
  • 3-4 cloves garlic, crushed
  • 1/2 tsp salt

Instructions
 

  • If needed, prepare the frozen edamame according to package instructions. If no instructions, place 2 cups of edamame in a microwave-safe bowl, add 2 tbsp of water and microwave on high for 3-4 minutes, stirring halfway through. Once the edamame is cooked, let it cool for 5-10 minutes.
  • In a food processor, combine all ingredients and blend on high until smooth. You may need to stop and scrape down the sides a couple of times to make sure it is fully blended.
  • Adjust the seasoning (garlic, salt and cilantro) as needed. If you prefer a thinner consistency, add more oil or water 1 tsp at a time.
  • Pair with fresh veggies, crackers or pita bread or use in a sandwich or wrap. Enjoy!

Notes

If you are not a fan of cilantro, try fresh basil instead!
