How did the second half of this year fly by so quickly?! It’s hard to believe we are two days from Christmas and very close to saying adios to 2020. While I’m sure some of you are happy to see 2020 go, I think it is still nice to reflect on the year and some of the positive things to come of it.

If you are an avid podcast listener, I have a recommendation that will help you get into the holiday spirit. This morning I listened to an episode from The Daily podcast titled “The Year in Good News.” It was so uplifting to hear numerous people from around the world share their best moments of 2020. While you are listening to the episode, preparing for a small family get-together or having a solo holiday, this Classic Chickpea Hummus is a must-make! You really can’t go wrong with a good ole’ dip for vegetables, crackers or pita. Plus, the extras can be used on a wrap or as a delicious topping for a Nourish Bowl.

You could be extra fancy and make up a full charcuterie board like I did here. Include your favourite fruits and vegetables, crackers and cheese, nuts, honey and chocolate and you have yourself a spread!

Classic-Chickpea-Hummus

Classic Chickpea Hummus

Ingredients
 

  • 1 540 ml can chickpeas, drained and rinsed
  • 1/4 cup tahini
  • 3 tbsp lemon juice
  • 3 cloves garlic, crushed
  • 1 tsp salt
  • 2-3 tbsp water, depending on desired consistency

Instructions
 

  • In a food processor or high-speed blender, add the chickpeas, tahini, lemon juice, garlic and salt. Blend on high speed for 20-30 seconds.
  • Using a spatula, scrape down the sides of the container and blend again for another 20-30 seconds. Add water 1 tbsp at a time, blending in between until you reach the desired consistency.
  • Add more salt if needed.
  • Serve with vegetables or crackers or use as a spread. Enjoy!
