Radishes are officially in season and we are here for it. A chopped salad with radishes adds a bite with a crunchy and refreshing texture.

If you haven’t tried radishes yet, they are a great source of vitamin C and potassium and can be used in salads, with dips like hummus, or sauteed.

Chopped Radish Salad

Ingredients
 

  • 1 bunch radishes, diced
  • 1/2 large bell pepper, diced
  • 1 cup cucumber, diced
  • 1 jalapeno, diced
  • 1 avocado, diced
  • 1/4 cup cilantro, chopped

Honey Dressing

  • 3 tbsp olive oil
  • 2 tbsp white wine vinegar
  • 1 tsp honey
  • 1/4 tsp red chili flakes
  • 1/4 tsp paprika
  • 1/4 tsp salt
  • 1/4 tsp pepper

Instructions
 

  • In a large bowl, place all vegetables and cilantro. Mix together.
  • In a small bowl or measuring cup, whisk the dressing ingredients together. Drizzle over the salad.
  • Let the salad sit for 10-20 minutes to marinate.
  • Add avocado and serve immediately. Enjoy!
