If you don’t have some of the suggested ingredients or you would like to add something to the recipe, here are some recommendations:

  • Chicken breasts
    • These can easily be used instead of chicken thighs in this recipe. This recipe calls for 8 chicken thighs so I would recommend using 4 chicken breasts.
  • Higher or lower fat Greek yogurt
    • I like using 2% milk fat (M.F.) Greek yogurt because it provides a bit of creaminess while still being relatively low-moderate in saturated fat. However, you can still use a 0% or 5% M.F. Greek yogurt in this recipe. 
  • Sour cream
    • Use sour cream if you don’t have any plain Greek yogurt available.
  • Garlic cloves or garlic powder
    • I wanted to keep this recipe as simple and minimalist as possible but adding either minced garlic cloves or powder, would provide a great flavour.
  • Coriander
    • If you want to add a herb to this dish, coriander, or dried cilantro, is a great option. Add about ¼ tsp of coriander to the marinade.

Here’s how to make this air fryer chicken recipe:

  1. In a large bowl add the Greek yogurt, curry powder, salt and pepper. Mix well.
  2. Add the chicken thighs to the yogurt marinade and stir until the chicken is well coated. Cover and place in the fridge to marinate for at least 1 hour, or overnight if desired.
  3. When you’re ready to cook the chicken, preheat the air fryer to 400°F and prepare the air fryer basket by using a liner or lightly greasing it.
  4. Once up to temperature, place the marinated chicken thighs in the prepared air fryer basket, making sure they are evenly spaced apart. Cook for 18-22 minutes, flipping halfway through, or until the internal temperature of the chicken thighs reaches 165°F (74°C).
    1. The cooking time can vary depending on the thickness of the chicken thighs and how many are in the air fryer at once.
  5. Allow them to rest for 3-5 minutes before serving with your desired toppings. See below for some suggestions!

    • Preheat the grill to medium-high heat, between 400-450°F. Place the marinated chicken thighs on the grill and cook for 4-5 minutes on each side or until the internal temperature of the chicken thighs reaches 165°F (74°C).
